Ingredients:
150g oatmeal
150g applesauce (no added sugar)
2 eggs
50g sugar or honey
100ml milk (or plant-based drink of your choice)
1 sachet baking powder (11g)
1 pinch of salt
1 tablespoon olive or coconut oil
1 diced apple (optional but delicious!)
A few slivered almonds or walnuts for decoration
Instructions:
Prepare the batter: Preheat your oven to 180°C (350°F). Line a loaf pan with parchment paper. Mix together the oatmeal, baking powder, cinnamon, and salt. In another bowl, whisk the eggs with the sugar, then stir in the applesauce, oil, and milk.
Mix the ingredients: Pour the dry mixture into the liquid and gently combine. Add the diced apples for a touch of fresh crunch!
Bake: Pour the batter into the pan and sprinkle with slivered almonds or crushed walnuts. Bake for 30 to 35 minutes, until a knife comes out clean. Let cool before removing from the pan.
Serving: Enjoy warm or cold, with tea or plain yogurt for a perfect combo.
