Ingredients:
- 2 medium zucchini
- 100g grated cheese (Parmesan or mozzarella)
- 1 egg
- 100g breadcrumbs
- 1 small garlic clove
- 1 tablespoon chopped fresh parsley
- Salt and pepper to taste
- Olive oil
Instructions:
- Preheat your oven to 200 degrees Celsius.
- Grate the zucchini and place it in a clean tea towel. Squeeze out excess water.
- In a large bowl, combine the grated zucchini, cheese, egg, breadcrumbs, minced garlic, parsley, salt, and pepper.
- Form the mixture into small balls, pressing them tightly.
- Arrange the balls on a baking sheet lined with parchment paper. Drizzle lightly with olive oil.
- Bake for approximately 20-25 minutes, until golden brown and crispy.
- Serve warm with yogurt sauce or tomato sauce for dipping.
