Crispy and Soft Baked Zucchini Balls 🍽️🥒

Ingredients:

  • 2 medium zucchini
  • 100g grated cheese (Parmesan or mozzarella)
  • 1 egg
  • 100g breadcrumbs
  • 1 small garlic clove
  • 1 tablespoon chopped fresh parsley
  • Salt and pepper to taste
  • Olive oil

Instructions:

  1. Preheat your oven to 200 degrees Celsius.
  2. Grate the zucchini and place it in a clean tea towel. Squeeze out excess water.
  3. In a large bowl, combine the grated zucchini, cheese, egg, breadcrumbs, minced garlic, parsley, salt, and pepper.
  4. Form the mixture into small balls, pressing them tightly.
  5. Arrange the balls on a baking sheet lined with parchment paper. Drizzle lightly with olive oil.
  6. Bake for approximately 20-25 minutes, until golden brown and crispy.
  7. Serve warm with yogurt sauce or tomato sauce for dipping.
