Ingredients (Serves 2):
2 large tortillas

2 chicken breasts, cut into strips

½ cup breadcrumbs

1 egg, beaten

1 tsp paprika

1 cup shredded cheddar cheese

1 cup lettuce, shredded

2 tbsp ranch dressing

2 large potatoes, cut into wedges

1 tomato, diced

½ cucumber, diced

2 tbsp olive oil

Salt and pepper to taste

Instructions:
Prep the Wedges
